Domaine de Saint-Pierre is a small, highly regarded estate in the village of Arbois in France's Jura region, run by Fabrice Dodane. A long-serving winemaker who took ownership of the property in 2011, Dodane farms his vineyards organically and works with minimal sulphur and only wild yeasts, producing wines of great purity and character.
Château Renard is made entirely from Chardonnay and vinified in the topped-up, non-oxidative (ouillé) style, fermented and aged in large oak puncheons to preserve freshness and fruit. The result is bright and mineral, with aromas of white flowers, lemon and orchard fruit, a fine saline thread and a taut, stony finish that captures the distinctive character of the Jura.
A versatile food wine, it pairs beautifully with roast chicken, Comté cheese or freshwater fish. Serve well chilled.
