This is the wine the domaine makes in tribute to Guy Moreau, Christian's father, who planted a hectare of vines in the premier cru of Vaillon back in 1933. Those same vines are still working, and the fruit from that single parcel is bottled separately under his name.
Old vines on Kimmeridgian limestone produce something noticeably more mineral and more tightly wound than the regular Vaillon. The nose leans towards wet pavement, lemon pith and struck flint rather than orchard fruit, and the palate is fresh and taut, with a fine bead of acidity, drawing in and gaining salinity through a long finish. Ageing takes place in used barrels, so there is texture and a subtle nuttiness without any obvious oak character.
Production is tiny, often just a handful of barrels. Domaine Christian Moreau farm twelve hectares in Chablis organically, and the family's history in the town runs back to 1814. Give this one a little air and time in the glass, and serve it with scallops, richer seafood, veal or aged hard cheese.
