A premier cru from the left bank of the Serein, Vaillon runs along a broad south east facing slope of fossil rich Kimmeridgian limestone. It has long been regarded as one of the most complete premier crus in Chablis, combining the appellation's steely core with a touch more flesh and breadth.
In the glass it is pale and bright, with citrus, white peach, pear skin and white blossom on the nose, and the flint and crushed shell character that only Chablis really delivers. The palate is taut and precise, with a fine mineral grain that builds through the middle and carries the finish out long, dry and mouth watering.
Domaine Christian Moreau farms twelve hectares across the appellation organically. The family's presence here dates to 1814 and the founding of the merchant house J. Moreau et Fils by Jean Joseph Moreau, and after decades outside family control the estate and its vineyards returned to them in 2002. Drink it with oysters, scallops, grilled white fish or a plate of charcuterie.
