Roc Solare is a distinctive grower Champagne from Dhondt-Grellet, the family estate based in Flavigny, just outside Avize, in the Côte des Blancs. Young winemaker Adrien Dhondt took over in 2012 and has since become one of the region's most talked-about talents, farming under a non-certified organic and biodynamic philosophy.
Predominantly Chardonnay, with a small portion of Pinot Noir, from older vines on flinty soils of the Coteaux du Sézannais. The wine is more solar and textural than the domaine's Côte des Blancs cuvées - expect aromas of candied lemon zest, green apple, warm stone, toasted hazelnut and a subtle iodine, saline nuance, with a creamy, savoury palate and fine, lively bubbles.
Built on the 2021 base vintage, supplemented by a perpetual reserve maintained since 1986, vinified partly in stainless steel and partly in barrel. Bottled as an Extra Brut with around 3 g/L dosage.
