Dappled is a small Yarra Valley producer led by winemaker Shaun Crinion, whose time in Burgundy shaped a detailed, low-intervention approach. The Appellation range captures the character of the wider Yarra Valley in an approachable, beautifully made style.
Hand-picked fruit is chilled overnight, gently handled and fermented with natural yeasts in a mix of old and new French oak. The result is a Chardonnay with grilled cashew and gentle toast over a core of white stone fruit and citrus, finished with a bright line of pink grapefruit acidity.
Textured yet fresh, it balances richness and drive, and pairs happily with a wide range of dishes.
