COS is one of the most influential producers in Sicily, based in the town of Vittoria in the island's south-east. Founded by Giambattista Cilia, Giusto Occhipinti and Cirino Strano, the estate has farmed biodynamically since the early 2000s and is celebrated for its pure, honest expression of native Sicilian varieties.
Frappato is a fragrant, lighter-bodied red grape, and this bottling shows exactly why it has such a devoted following. Fermented with indigenous yeasts and raised in concrete, it brims with bright red cherry and wild berry fruit, lifted by violet, blossom and a savoury herbal edge. The tannins are soft and the palate is juicy and refreshing.
Best enjoyed with a slight chill, it is a wonderfully versatile food wine. Try it with charcuterie, tomato-based pasta, grilled vegetables or lighter meat dishes.
