A cool-climate estate Syrah from Cobaw Ridge, the certified organic and biodynamic vineyard planted by Alan and Nelly Cooper in 1985 in the Macedon Ranges, Victoria. The vines sit at around 610 metres on granitic, sandy soil in a north-facing natural amphitheatre - one of the coldest viticultural sites on the Australian mainland.
This is Syrah in a distinctly savoury, European-leaning style. Expect lifted aromas of black pepper, potpourri, undergrowth, crushed stone and dark cherry, leading into a medium-bodied, supple palate with lacy, chalky tannins and a long, fresh finish.
Low-cropped mature fruit is gently destemmed and membrane pressed, then fermented and matured in older oak with minimal handling. No fining, filtration or stabilisation, just a small sulphur addition at bottling.
