An estate-grown Chardonnay from Cobaw Ridge, the certified organic and biodynamic vineyard established by Alan and Nelly Cooper in 1985 in the Macedon Ranges of Central Victoria. Planted on granitic, sandy soil in a natural north-facing amphitheatre at around 610 metres elevation, it's one of the coolest and highest sites on the Australian mainland.
The resulting wine is a cool-climate, mineral-driven Chardonnay. Expect yellow stonefruit, lemon verbena, citrus zest, green almond and a touch of honeycomb, all framed by a chiselled, saline texture and fine, persistent acidity that drives a long, savoury finish.
The fruit is whole-bunch pressed and transferred to French oak (with a portion new) where it undergoes wild, slow fermentation and full malolactic fermentation, ageing on lees for around 12 months. The wine sees minimal intervention with no fining, filtration or stabilisation - just a small addition of sulphur before bottling. 13% ABV.
