L'Aventure draws on the three villages at the heart of this estate, Avize, Cramant and Cuis, to make a blanc de blancs that reads as a portrait of the whole holding rather than a single site. It is 100 per cent Chardonnay and spends a minimum of 30 months on lees, which is a long time for a wine at this level and shows in the texture.
The nose combines the floral lift of Cramant with the chalky severity of Avize and the citrus bite of Cuis: lemon peel, white blossom and green apple over toasted almond and a light brioche note. The palate is finely balanced, with a delicate mousse, a saline chalky grip through the middle and a dry, persistent extra brut finish.
Brothers Florent and Julien Mignon started bottling under their own label in 2015, breaking with a family tradition of selling fruit to the major houses. Their vines were largely planted by massale selection, fermentation is spontaneous, ageing takes place in barrels of 255 to 600 litres, and nothing is fined or filtered.
