Cantillon Bruocsella is a pure, unblended lambic from Brasserie Cantillon, the historic Brussels brewery founded in 1900 and still run by the same family. Bruocsella is an old name for Brussels, a fitting title for one of the few straight, unfruited lambics any producer bottles.
It is a single batch of spontaneously fermented lambic, matured in oak casks for around three years and bottled as it is. Because no young lambic is blended in, there is no second fermentation in the bottle, so the beer is still rather than sparkling.
The result is deeply complex and dry, with oxidative, sherry-like and oaky notes, soft acidity and earthy wild-yeast character. Best served in a wine glass, it is often described as a missing link between wine and beer.
