Domaine Camille et Guillaume Boillot is a family estate in the Cote de Beaune, founded in 2021 by Guillaume Boillot and his wife Camille. Guillaume previously oversaw red wine production at his father Henri Boillot's estate, while Camille hails from the Violot-Guillemard family of Pommard. The couple farm with care for the vine and biodiversity and age their wines in oak with a light touch, allowing site and fruit to lead.
This Meursault is sourced from Les Clous, a lieu-dit high on the hillside above the village where cooler conditions and limestone-rich soils give wines of cut and clarity. Made from Chardonnay, it favours precision over opulence, with aromas of lemon, orchard fruit and white flowers leading to a fresh, mineral palate marked by citrus zest, a saline core and a long, linear finish.
Serve well chilled with oysters, grilled fish, roast chicken or fresh goat's cheese.
