Bass Phillip has been a defining voice in cool-climate Australian wine since Phillip Jones planted its close-spaced vineyards in South Gippsland, working in a distinctly Burgundian idiom. The recent partnership with Jean-Marie Fourrier, the acclaimed vigneron of Gevrey-Chambertin, has brought an even finer focus to the range, guided by the low-intervention philosophy of Henri Jayer.
The Premium Chardonnay sits above the Estate bottling, sourced from favoured blocks of mature vines and given careful handling in the cellar. It is a concentrated yet elegant white, offering grapefruit, nectarine and white flowers, with flinty, nutty complexity from wild ferment and French oak. Layered and creamy through the middle, it stays fresh and saline to a long, driven finish.
Serve with richer seafood, roast poultry or soft cheeses. A gentle chill and a little air in the glass will show it at its best.
