Yarra Yering's Dry White No. 2 is the estate's Rhône-inspired white blend, first conceived by founder Dr Bailey Carrodus and now in the hands of chief winemaker Sarah Crowe. Marsanne has been planted at the vineyard since 1969, joined by Viognier in the late 1970s and further Roussanne and Grenache Blanc in more recent plantings.
Each component is vinified separately from fruit drawn off the estate's single vineyard at the foot of the Warramate Hills. The wine is aromatic and textural, with white flowers, jasmine, nashi pear, green apple crunch and subtle yellow spice, and a fine chalky, lightly tannic finish thanks to the ceramic egg maturation.
Hand-harvested and whole-bunch pressed, the unclarified juice is gravity-filled into seasoned French oak and ceramic eggs where it ferments and matures on lees for around 10 months before blending and bottling.
