Grouse is an American-style amber ale from TWØBAYS Brewing Co, based in Dromana on Victoria's Mornington Peninsula. TWØBAYS is Australia's only dedicated 100% gluten-free brewery and taproom, founded by Richard Jeffares after a coeliac diagnosis with the goal of making gluten-free beer that coeliacs and non-coeliacs alike would happily drink.
Rather than stripping gluten out after brewing, this is an all-grain beer made entirely from gluten-free malts, avoiding barley and wheat altogether. It is a collaboration with the Grouse Malt House in Colorado, brewed exclusively with their gluten-free millet malts, which give it a rich malt backbone.
Malt-forward in character, it shows toffee and caramel notes alongside a touch of stone fruit, balanced by pine and resin from American hops Chinook and Amarillo.
