TWØBAYS Brewing Co was Australia's first brewery built from the ground up to make beer that is entirely gluten free. Based in Dromana on the Mornington Peninsula, the team works with alternative grains rather than barley, and this Chocolate Porter is one of their specialty releases.
The grist is built on millet and rice, and the beer is finished with roasted cacao nibs and rum soaked vanilla pods. That combination gives it genuine depth: layers of roasted nuts, coffee and dark chocolate bitterness, with the vanilla softening the edges.
Smooth and indulgent, it is made to be savoured slowly rather than knocked back. Serve it between six and ten degrees, and if the can has been sitting in the fridge, let it stand for ten minutes before opening so the aromatics wake up.
