Theo Dancer is the talented young winemaker and son of the renowned Vincent Dancer of Chassagne-Montrachet, one of the most admired names in white Burgundy. Alongside taking over much of the work at his father's domaine, Theo has launched his own négociant project, honouring the Dancer philosophy while adding his own energy and exploring less conventional Burgundian varieties.
The Bourgogne Aligoté 2024 comes from a plot in Nantoux, with recent vintages also incorporating old-vine Aligoté from Meursault. The 2024 vintage was particularly challenging, with a wet spring leading to severe mildew pressure and exceptionally low yields; even so, Theo notes that the quality of the remaining grapes produced one of the most intriguing Burgundian vintages in recent years.
Grapes are hand-harvested and pressed directly to barrel, where fermentation takes place with native yeasts. The wine rests unracked until winter, then is racked to stainless steel to settle before bottling. Natural malolactic fermentation takes place without enzymes, acids, bâtonnage, fining or filtering, with minimal sulphur added.
