From Terre à Terre, the family estate of Xavier Bizot and Lucy Croser, working from their Crayères Vineyard in Wrattonbully. The vineyard, planted in 2004 on a north-south limestone ridge under terra rossa topsoil, takes its name from the chalk cellars of Xavier's native Champagne.
The Reserve Sauvignon Blanc (also known as Reserve Fumé Blanc) comes from the warmer western part of the Crayères Vineyard. Expect a slick, stylish and barrel-fermented wine with focused aromas of passionfruit, stone fruit, white flowers, almond meal and beeswax, leading into a tightly proportioned palate with fine acidity, generous texture and the kind of silky, complex nougat-and-citrus character associated with serious white Bordeaux and Pouilly-Fumé.
Hand-picked and whole-bunch pressed, then fermented in 600-litre old French oak demi-muids. Aged for around 8 months on full lees in barrel, with a final month of stabilisation in stainless steel before bottling. The wine then rested in bottle for a further 18 months prior to release, giving a silky texture and lingering flavour persistence.
