J. de Villebois is a leading name in Sancerre, founded by Joost and Miguela de Villebois, who over many years have become specialists in the pure, mineral Sauvignon Blanc of the Central Loire. This wine is drawn from vineyards across Sancerre's three classic soil types, the limestone-rich caillottes, the clay-marl terres blanches and the flinty silex, which together give it both generous fruit and a distinctive stony backbone.
Gently pressed and fermented in stainless steel before resting on fine lees, it pours a pale green-gold and offers intense aromas of citrus, gooseberry and fresh-cut herbs. The palate is both powerful and precise, with zesty grapefruit and green fruit carried by racy acidity to a long, flinty finish.
A classic partner for oysters and fresh shellfish, grilled white fish, or the region's famed goat cheeses. Serve well chilled.
