From Symons, the personal label of veteran Mornington Peninsula winemaker Mike Symons. Mike spent 18 years at Stonier on the Mornington Peninsula and trained at Brian Croser's Petaluma in the Adelaide Hills before returning to his roots and founding his own brand in 2022. He works from a shared winery on the Peninsula with a small group of like-minded producers, in a distinctly hands-off, vineyard-first style.
100% Chardonnay from older plantings on the Mornington Peninsula, a cool, maritime cool-climate region known for its precise, savoury Chardonnays. Expect a wine with bright citrus drive, white-fleshed stone fruit and a savoury edge, framed by natural acidity and gentle textural complexity rather than overt oak.
Hand-picked at restrained yields, with restrained winemaking and minimal new oak (typically under 20%) so that the wine speaks of its sites rather than the cellar.
