Riposte is the Adelaide Hills label of Tim Knappstein, one of the most experienced names in South Australian wine. After selling his Clare Valley interests in 1995 to focus entirely on the cool slopes of the Adelaide Hills, he launched Riposte in 2006, and today makes the wines alongside his son Nick. The Sabre is a key Pinot Noir in the range, a barrel selection drawn from several vineyards chosen for their altitude, aspect and clonal mix.
Each clone and site is kept separate through the winemaking, giving the Knappsteins a wide palette of parcels to blend from. The wine is matured in French oak, with a modest portion of new barrels reserved for the batches best suited to it, so the oak frames the fruit rather than dominating it. The result is a generous, varietally true Pinot with darker cherry aromas and flavours, a lift of bushland florals and a faint hint of char from the barrel, all carried by fine, supple tannins.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
