Pooley Wines is a family-owned Tasmanian estate based in the Coal River Valley, regarded as one of Australia's benchmark cool-climate producers. The Butcher's Hill Vineyard is one of the family's most prized sites, an elevated parcel of dolerite-rich soils that consistently delivers fruit of brightness, lift and savoury detail.
The 2025 is a finely detailed expression of cool-climate Pinot. Red cherry, wild strawberry and cranberry lead on the nose, lifted by rose petal, dried herbs and a touch of spice. The palate is silky and bright, with crunchy red-berry fruit framed by fine-grained tannins, refreshing acidity and a savoury, gently earthy finish. A judicious nod of oak adds texture without overshadowing the fruit.
Excellent with duck confit, mushroom risotto, slow-cooked rabbit or a board of cured charcuterie.
