Domaine des Hates is Pierrick Laroche's estate label, drawn from vines he farms himself rather than from bought in must. The property sits at Maligny in the north west corner of the Chablis vineyard, established by his father in the 1970s, and in 2019 it grew with an inheritance of vines in the southern sector around Courgis.
Laroche took an oenology degree at Beaune, then spent years working harvests around the world before coming home and making his first wine in 2010. The domaine name comes from hates, an old agricultural unit of measure roughly equivalent to the English rod.
This straight Chablis is precise and unadorned. Lemon, green apple and white blossom on the nose, with the flinty oyster shell character that the region's Kimmeridgian limestone always delivers. The palate is dry and tightly drawn with a fine chalky texture, and the finish is clean, saline and persistent. Serve well chilled with oysters, shellfish, grilled fish or goat's cheese.
