Bindi is a small family estate in the Macedon Ranges, roughly 50 kilometres north west of Melbourne and among the coolest vineyard sites in Australia. Kostas Rind Chardonnay is named for the schoolteacher and mentor who first introduced the family to fine wine, and the label has been part of the range since the earliest Bindi releases.
The fruit comes from the lower Chardonnay plantings, established in 1988 on volcanic soil over clay at around 500 metres of altitude. The wine is fermented in barrel with indigenous yeast and no additions, then aged for close to a year on its lees in French oak, only a small proportion of it new.
The style is tightly wound and mineral. Grapefruit, white peach and lemon curd sit over struck flint, almond and a saline, chalky line, with the lees work adding texture without weight. It is precise and long on the finish, and develops beautifully over five to ten years.
