Patrick Piuze is a Canadian-born winemaker who has become one of the most compelling voices in modern Chablis, crafting terroir-driven wines that capture the precise character of each individual climat. Blanchots sits at the south-eastern end of the Grand Cru hillside, where limestone-rich Kimmeridgian soils and a warm, sheltered aspect give a wine of finesse and detail.
This is a refined expression of Chardonnay, leading with delicate floral and citrus aromas alongside orchard fruit and a saline, mineral lift. The palate is silky and gently layered, built around bright acidity and a long, stony finish that prizes elegance over weight.
Grand Cru Chablis like this rewards patience, and Blanchots is among the most graceful of the seven Grand Cru climats. It pairs beautifully with oysters, scallops and richer seafood dishes.
