L'Homme Mort is a lieu-dit at the northern tip of the Fourchaume slope, far enough along the ridge that it is regularly bottled in its own right rather than folded into the larger cru. The vines here were planted in 1970, and the extra distance north brings cooler air and a more austere, tightly wound style than the body of Fourchaume produces.
Expect a cool, precise nose of lemon peel, green apple and oyster shell, with a flinty edge that is characteristic of the site. The palate is lean and finely cut, driven by acidity, with a chalky, almost salty texture and a long, dry, persistently mineral finish. This is Chablis at its most uncompromising.
Michel Laroche sold the large domaine that bore his name in 2010 but held on to the parcels handed down by his father Henri, and Le Domaine d'Henri is the result, named for him. It is a deliberately small operation built around a handful of old parcels on the Fourchaume slope, and the family's presence in Chablis goes back to 1695.
