La Dama is a family-run winery in Negrar, in the classic heartland of Valpolicella near Verona. Founded by Gabriele and Miriam, the estate farms around 10 hectares of certified organic vineyards across Negrar and Sant'Ambrogio di Valpolicella, aiming for wines that are elegant, refined and well structured.
This Valpolicella Ripasso Classico Superiore is made mainly from Corvina, with smaller amounts of Corvinone, Rondinella and Molinara. Following the traditional ripasso method, the wine is refermented on the dried grape skins left over from making Amarone, which adds depth, body and warmth while retaining Valpolicella's freshness.
The result is a fuller, richer style with aromas of ripe cherry, plum and dried fruit, touched with spice and cocoa. The palate is generous and smooth, with rounded tannins and enough acidity to keep it lively through the finish.
Serve with braised beef, risotto all'Amarone, roast meats, mushroom dishes or mature cheeses.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
