Joseph Colin established his own domaine in 2017, taking a parcel of vines from the family estate to focus on the white wines of Saint-Aubin and its neighbours. The Saint-Aubin 1er Cru "En Remilly" comes from one of the rockiest and most highly regarded sites in the appellation, sitting just metres from the great hill of Montrachet and producing whites of real class and energy.
Made from Chardonnay and raised on its fine lees with indigenous yeasts, this is a precise, mineral-driven white. Expect aromas of pear, green apple, white flowers and a touch of pastry, leading to a medium to full-bodied palate that is satiny and ample yet bright and saline. There is concentration here, balanced by lively acidity and a long, stony finish.
Serve lightly chilled with grilled fish, shellfish, roast chicken or creamy soft cheeses. A wine that drinks beautifully now but will also reward a few years of patience.
