Joseph Colin, of the famous Saint-Aubin winemaking family, struck out on his own in 2017 with a small collection of choice parcels across Saint-Aubin and Chassagne-Montrachet. His approach in the cellar is deliberately hands-off, letting site and variety speak. This Bourgogne Aligote comes from the Jardins de la Cote lieu-dit in Saint-Aubin, one of the coolest, rockiest corners of the village, planted with old vines on clay and limestone.
Made from the Aligote grape and raised in older barrels with native yeasts, this is a serious, mineral white that rises well above the everyday for the appellation. Expect ripe peach and lemon zest, a savoury, biscuity note and a saline edge, all carried by bright, refreshing acidity.
Serve it well chilled as an aperitif, or alongside fresh seafood, oysters, soft cheeses or a classic kir. Its crisp, lively character makes it endlessly versatile at the table.
