Thalassitis from Gaia Wines is a pure and thrilling expression of Assyrtiko, the indigenous white grape that has come to define the Greek island of Santorini. Grown in ancient, low yielding vineyards set into the island's black volcanic soil, this is a wine that captures the wild, sun drenched and sea sprayed soul of the Aegean.
Made without oak to keep the fruit and minerality front and centre, it is aged on its lees for several months to build texture while preserving vivid freshness. The result is a dry white of striking energy and precision.
Expect bright aromas of lemon, quince and star fruit lifted by a distinctive note of crushed stone. The palate is taut and mineral driven, with zippy citrus, a saline, almost smoky edge and a mouthwatering, lemon oil finish.
