Four Pillars Three Peach Gin is a fruit-forward gin from the acclaimed Four Pillars distillery in Healesville, in Victoria's Yarra Valley. As the name suggests, it draws on three kinds of peach, pairing Victorian white peaches and yellow peaches with the quandong, an Australian native peach, to build layered stone-fruit character. The peaches are turned into a macerate and combined with a classic gin botanical base that includes juniper, coriander, finger lime, vanilla and wattleseed.
The white peaches bring a delicate, pretty floral note while the yellow peaches add golden, sweet peach character and a touch of natural colour. The nose offers aromas of white stone fruit and white chocolate with hints of citrus and green apple, while the palate is soft and gently sweet with warm spice and a crisp, apple-fresh finish.
Bright and summery, it shines in a peach gin spritz or a three peach bellini, and is just as easy poured long over ice with soda. The result is a distinctly Australian take on flavoured gin that stays balanced rather than sugary.
