Cabassaou is the rarest and most prestigious cuvée in Domaine Tempier's Bandol lineup — a tiny parcel tucked at the foot of La Tourtine on a sun-drenched, sheltered terroir of red clay and limestone. It is made only in the finest vintages, from vines with a minimum average age of 60 years.
The blend is unusually Mourvèdre-dominant even by Bandol standards — 92–94% Mourvèdre with small supporting roles from Syrah and a little Cinsault. The 2023 unfurls a deep, classic Provençal bouquet of ripe black fruits, truffle, leather, garrigue and spice, lifted by a mineral thread. The palate is dense and majestic, with powerful yet refined tannins, impressive concentration and a long, pepper-and-liquorice finish balanced by underlying freshness.
Fermented in concrete vats with native yeasts over 3–4 weeks and aged 18 months in large oak foudres. A cellar-worthy Bandol of extraordinary pedigree, made in very limited quantities — the peak of the Tempier range.
