Domaine Sylvain Dussort sits in the heart of Meursault, one of the great white wine villages of the Côte de Beaune. Sylvain took over the estate in 1982 and farms around six and a half hectares, working with minimal intervention and devoting the great majority of production to Chardonnay.
This village Meursault comes from the estate's older plantings. The fruit is harvested by hand, fermented on native yeasts and matured in barrel with extended time on its lees, but without bâtonnage, so the texture develops naturally rather than being stirred into the wine. The aim is depth without heaviness.
It is a classic expression of the village. Ripe white peach, citrus and pear are carried on a rounded, gently creamy palate, with hazelnut, butter pastry and white flowers behind and a firm mineral line keeping the finish long and fresh. Serve it with roast poultry, scallops or a rich fish dish, and it will improve for several years yet.
