Cuvée des Ormes is the flagship of Domaine Sylvain Dussort and a wine Sylvain fought hard to establish under its regional appellation. It comes from three hectares of vineyard within Meursault itself, drawn from the lieux-dits En l'Ormeau, Les Pellans, Les Malpoiriers and Les Dressolles, with vines ranging from thirty five to well over sixty years of age.
Sylvain Dussort took over the family estate in 1982 and works six and a half hectares in Meursault with a focus almost entirely on white wine. The fruit is picked by hand and fermented with native yeasts, then aged twelve months in barrel with extended lees contact but no bâtonnage, so the texture builds slowly rather than being forced.
The result behaves far more like a Meursault than its label suggests. Old vines lend real weight and concentration to white peach, citrus and ripe pear, hazelnut and white flowers sit behind, and a taut, flinty minerality runs right through to a long finish. Serve it with roast chicken, richer seafood or a creamy cheese.
