Sechet is a small premier cru on the left bank of the Serein, a steep and stony slope that has a reputation for producing some of the most tightly wound wine in Chablis. Samuel Billaud's parcel here is planted to vines of around ninety years of age, the oldest at the domaine.
The wine is raised entirely in steel for eighteen months, with no wood at any stage, and the effect is uncompromising clarity. The bouquet is all lemon zest, oyster shell, white flowers and crushed chalk. On the palate it is compact and chiselled rather than broad, with extraordinary purity, a bright incisive line of acidity and a strikingly sapid, mouth watering finish.
Samuel Billaud left Domaine Billaud-Simon and founded his own label in 2009, buying back four hectares of family vines and moving into a gravity fed cellar in 2015. He has since become one of the most closely followed names in Chablis. This has the structure to age for many years; serve it with oysters, langoustine, turbot or a mature hard cheese.
