Coeur de Chardonnay is Domaine Rolet's top Crémant du Jura, a vintage-dated blanc de blancs made entirely from Chardonnay. It is a selection of the estate's best sparkling lots, with much of the fruit coming from En Chagnon at Montigny-lès-Arsures, a site with a mosaic of limestone and marl soils that the domaine uses mainly for its crémants.
The grapes are whole-bunch pressed and fermented at cool temperatures in stainless steel before the second fermentation in bottle, followed by extended ageing on lees of more than three years and a low dosage. The result is a pale golden sparkling wine with fine bubbles, green apple, lemon brioche and fresh bread dough notes, a hint of flaky salt and a long finish of bright lemon pith and peel.
Domaine Rolet was founded in Arbois in 1942 by Désiré Rolet and has grown into one of the Jura's larger family-run estates, with around 65 hectares of vines spread across Arbois, Côtes du Jura, L'Etoile and Château-Chalon. Since 2018 the domaine has been in new hands, with farming moving towards organic practices, no herbicides or pesticides, and every bunch picked by hand.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
