Thistle & Weed is a Stellenbosch-based label founded by winemaker Stephanie Wiid, focused on small-batch, site-driven wines from the granite and sandstone soils of the Western Cape. Vinkel is the project's first Méthode Cap Classique, a sparkling expression of South Africa's signature white grape, Chenin Blanc.
Sourced from trellised vines on the foothills of the Simonsberg, the fruit is bottle-fermented and rests on lees for around twelve months to build texture and complexity. The result is a fresh, finely beaded sparkling with green apple, lemon pith, white peach and a gentle hint of brioche from the lees ageing. The palate is bright and chalky, with a dry, saline finish and the kind of clarity Chenin does so well.
An elegant, food-friendly sparkler that suits aperitifs, fresh seafood, fried chicken or a quiet celebration.
