Domaine Louis Michel & Fils is one of the historic Chablis families, with the current generation under Guillaume Michel working a 25-hectare estate established in the mid-nineteenth century. The house pioneered the all-stainless-steel style of Chablis in the 1980s, and continues to vinify and age every wine without oak so that pure terroir comes through.
Forêts is a Premier Cru on the left bank of the Serein, part of the Montmains group of climats. The steep, south-east-facing parcels on Kimmeridgian limestone give wines of fine balance, with linear acidity and a chalky, gunflint signature.
The 2023 shows pear, apple and tangerine zest aromatics over flint, chalk and white-lily notes, with a deeper, more brooding side of forest floor and ripe spice on the secondary nose. The palate is full-bodied and complex, with a juicy core of fruit, lively mineral cut and a long, well-balanced finish. Built for medium-term cellaring.
