Domaine Jean Macle is regarded as the master of Château-Chalon and one of the greatest oxidative producers in the Jura. The family settled in Château-Chalon in 1850 and is now in its seventh generation through Laurent Macle, who farms 12 hectares — eight of Chardonnay in the Côtes du Jura and four of Savagnin in Château-Chalon — with his father Jean.
The classic Macle Côtes du Jura blend of around 85% Chardonnay and 15% Savagnin, grown on Jurassic limestone-clay soils. Expect a profound, complex oxidative white with floral notes alongside beeswax, acacia honey, walnut, almond and a subtle saline bitters on the finish. Silky in texture with a distinct terroir imprint, and an uncanny ability to age for decades.
Fermented in tank and then aged in older barrels for around four years 'sous voile' — under a naturally forming veil of flor yeast, in the Jura tradition — without topping up, producing the complex oxidative character that defines this style.
