Puligny-Montrachet at village level from a family that has farmed here for four centuries is about as pure a statement of the commune as you will find. The soils are shallow and stony over limestone, the water table sits unusually high, and the wines are consequently the most finely cut and acid-driven of the great white villages.
The nose is precise and cool, with lemon blossom, green apple and crushed oyster shell, filling out with white peach and a light toasted almond note. The palate is slender and linear, with a fine chalky texture, an insistent acid line and a long, dry, faintly saline finish.
The Carillons have been making wine in Puligny since at least 1632, and possibly a century earlier still, with a Jehan Carillon recorded as a vintner in the village in 1520. Jacques Carillon has bottled under his own name since the family estate was divided with his brother François from the 2010 harvest.
