From one of Burgundy's most respected white winemakers, this is Domaine Henri Boillot's Puligny-Montrachet from the premier cru vineyard of Les Perrières. As its name suggests, the site sits over stony, limestone-rich soils that lend the wine a pronounced mineral and saline character.
It shows a luminous pale gold, with a finely detailed nose of crushed limestone, lemon zest and white flowers, framed by cool orchard fruit, white peach, almond and a discreet touch of fine oak spice. Graphite and a saline lift add real complexity.
The palate is taut, linear and deeply mineral, with that saline savouriness running from start to finish. Partial ageing in new oak lends an elegant texture without overshadowing the fruit, and the result is a precise, structured Puligny built for the long haul.
