Les Peuillets is one of the larger premier cru climats of Savigny-lès-Beaune, running along the Beaune side of the Rhoin valley on deeper, gravelly soils above limestone. It has a reputation for producing Pinot Noir with a little more flesh and generosity than the leaner sites higher up the slope.
Domaine Guilbert-Gillet was founded in 2020 by Benjamin Guilbert and René Gillet, and has become one of the most sought after young addresses in the Côte de Beaune. Benjamin trained in Mâcon and Montpellier and worked at Château Smith Haut Lafitte, Domaine de Montille, Domaine Guigal and Clos des Lambrays, and points to Jacky Truchot as his model. Farming is organic and by hand, with three selections at harvest, complete destemming, a long maceration, slow pressing and at least eighteen months in barrel without racking before gravity bottling.
Expect a generous but finely drawn red. Ripe dark cherry and raspberry are backed by violets, sweet spice and a savoury undergrowth note, the tannins are supple and the finish long and fresh. Approachable young with duck, lamb or mushroom dishes, and comfortable in the cellar for a good decade.
