Domaine Guilbert-Gillet was founded in 2020 by Benjamin Guilbert and René Gillet, and has quickly become one of the names to watch in the Côte de Beaune. Benjamin arrived without a family estate behind him, training in Mâcon and Montpellier and working at Château Smith Haut Lafitte, Domaine de Montille, Domaine Guigal and Clos des Lambrays before settling in Savigny-lès-Beaune. Jacky Truchot is the winemaker he most often names as an inspiration, and the resemblance shows in the transparency of these wines.
Les Perrières takes its name from the old stone quarries, a reliable sign of shallow, rocky limestone soils. The vines are farmed organically and worked by hand. Three passes are made through the vineyard at harvest, the Pinot Noir is completely destemmed, and the wine macerates slowly before a gentle pressing and at least eighteen months in barrel without racking. Bottling is by gravity.
This is Pinot Noir at its most charming. Red cherry and wild strawberry are lifted by orange peel and dried herbs, the tannins are fine and chalky, and the finish is bright and mineral. A regional Burgundy with genuine detail, best enjoyed over the next few years with charcuterie, roast chicken or grilled salmon.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
