Domaine Gilbert Picq et ses Fils is a family estate based in the small, quiet village of Chichée just southeast of Chablis, farming its small collection of vines for several generations. Today the 13-hectare property is run by Gilbert's two sons Didier and Pascal along with his daughter Marilyn: Pascal tends the vines, Didier makes the wine, and Marilyn looks after the commercial side.
The Chablis 2023 is crafted from Chardonnay grown on classic Kimmeridgian limestone soils rich in marine fossils. It pours a bright, pale straw-yellow and opens with a complex mineral-driven bouquet, with white-fleshed apple and pear, subtle floral accents and a hint of citrus freshness. The palate is lively and fresh with a fine bead of acidity, leading to a long, clean, typically mineral finish that captures the pure expression of Chablis terroir.
Pascal keeps yields low with aggressive winter pruning and summer crop thinning. The fruit is hand-harvested (rare in Chablis) and vinified by Didier entirely in stainless steel with native yeasts — no oak is used, ensuring the clearest expression of site and variety.
