Domaine Gavoty is an historic family estate in the north-western Côtes de Provence, based at Campdumy, a Roman-era farm along the Issole River in the commune of Cabasse. The property has been in the Gavoty family since Philémon Gavoty acquired it in 1806, and is now led by eighth-generation Roselyne Gavoty. Set within 110 hectares of polyculture surrounded by oak and pine forest, the estate farms around 50 hectares of vines organically and works without synthetic chemicals.
The Grand Classique 2023 is a Provençal rosé combining Grenache and Cinsault in roughly equal proportions, with Carignan playing a supporting role that varies with the vintage. It shows fresh yet subtle aromas of strawberry and raspberry framed by limestone minerality, a hint of mandarin bitters and a crisp, dry citrus finish. The palate is elegantly textured, with racy acidity, gleaming fruit and a lingering, mouthwatering salinity that reflects the clay and limestone soils and Mediterranean climate of the estate.
Rather than being pressed straight after harvest, as is common in Provence, the hand-picked grapes macerate for several hours before pressing, with the saignée and first-press juices vinified separately. This allows Roselyne the flexibility to blend the more succulent saignée with the more angular press juice to achieve her preferred texture. The wine is then aged on fine lees in stainless steel tanks into the following spring, building complexity and mouthfeel while preserving freshness.
