This 1er Chablis comes from 3 hectares of estate vineyards in Vaupulent, Fourchaume, and Homme Mort, within the renowned Fourchaume Premier Cru. Inside the 1er Cru itself there are smaller 1er Cru named parcels and Le Domaine d’Henri also bottle Homme Mort separately on exceptional vintages. Average age of the vines are 45 years old.
Hand-harvested and fermented with indigenous yeasts, the wine undergoes 100% malolactic fermentation, followed by 18 months of aging—50% in stainless steel and 50% in large oak barrels
