Domaine Defialy is the estate project of Micah Hewitt, a former butcher who launched his Defialy label in 2020 and later created the Domaine range to showcase fruit from his own vineyard. Every Domaine wine comes from the Candlebark Hill vineyard in the Macedon Ranges, which Hewitt farms organically, and the name Defialy is an acronym for "don't ever forget I'll always love you", a tribute to his parents.
The Candlebark Hill Chardonnay is hand-picked and whole bunch pressed, then wild fermented on full lees in French barrels, a portion of them new, before a long maturation and a short rest in stainless steel ahead of bottling. Only a small addition of sulphur is made at bottling, and the wine is left unfined and unfiltered, in keeping with Hewitt's minimal-intervention philosophy.
The Macedon Ranges is one of Victoria's coolest regions, and this is a Chardonnay built on that cool-climate tension, with citrus and stone fruit, a textural, lees-driven palate and bright, mouthwatering acidity. It is a natural partner for seafood, roast chicken or soft cheeses.
