Domaine Defialy is the estate label of Micah Hewitt, the butcher turned winemaker behind the Defialy range. While his Defialy wines draw on bought-in fruit from across Victoria, the Domaine wines come solely from the Candlebark Hill vineyard in the Macedon Ranges, which Hewitt took over and converted to organic farming. The name Defialy is an acronym for "don't ever forget I'll always love you", a tribute to his parents.
This is a straight Cabernet Sauvignon from the estate, grown in one of Victoria's coolest wine regions. Hewitt's approach for the Domaine range is more traditional than his skin-contact Defialy wines: single varieties, careful farming and picking, and a light hand in the cellar. The fruit is destemmed and given an extended time on skins before a long maturation in a mix of new and older oak, and the wine is wild fermented and bottled unfined and unfiltered.
Expect a refined, medium-bodied, cool-climate Cabernet with fresh acidity and silky tannins, more in the mould of a classic luncheon claret than a big, ripe red. It is a wine that rewards a little time in the glass and suits roast lamb, mushroom dishes or a simple steak.
Vintages may vary. Email us at hello@barrelandbatch.com.au if you would like confirmation.
