Petit Chablis comes from the higher, flatter ground above the slopes that carry the village and cru vineyards, and in the right hands it is the most refreshing thing in Burgundy. Domaine Christian Moreau farm twelve hectares across Chablis organically, and the care that goes into their grand crus is applied here too.
This is Chardonnay stripped back to its essentials: lemon, green apple, white flowers and a cool, wet stone edge, with no oak to get in the way. The palate is light, dry and bracing, with a fine chalky texture and a clean, saline finish that makes you reach for the glass again.
The Moreau name has been in Chablis since 1814, when Jean Joseph Moreau founded the merchant house of J. Moreau et Fils. The family lost control of the business through the 1970s and 1980s, and since 2002 the estate and its vineyards have been back in Moreau hands. Serve it very cold with oysters, prawns, goat's cheese or a simple salad.
