The village Chablis is the wine that tells you most about a domaine, because there is nowhere to hide. Domaine Christian Moreau farm twelve hectares across the appellation organically, with around five of those in grand cru, and their straight Chablis is made with the same discipline.
Kimmeridgian marl, the fossil rich limestone that defines the region, is what gives Chablis its character, and it is unmistakable here. Lemon, grapefruit, green apple and white flowers on the nose, with a distinct oyster shell and flint note underneath. The palate is dry and finely cut, gently textured, and the finish is long, chalky and saline.
The Moreau family have been in Chablis since 1814, when Jean Joseph Moreau established the merchant house of J. Moreau et Fils. Control of the company passed out of family hands from the 1970s, and since 2002 the estate and its vineyards have been theirs again. Grand cru holdings include parcels in Blanchot, Les Clos, Valmur and Vaudesir. Serve well chilled with oysters, shellfish, grilled fish or goat's cheese.
