Vaillon is one of the best known premier crus on the left bank of the Serein, a long south east facing slope of Kimmeridgian limestone that gives Chablis with generosity as well as tension. It is a cornerstone of the range at Domaine Christian Moreau.
The extra ripeness of a premier cru site shows in the fruit without ever tipping into weight. White peach and citrus lead, joined by white flowers, almond and a hint of honeysuckle, all sitting over the flinty, oyster shell minerality that is the signature of the appellation. The palate has real drive and a fine chalky grip, finishing dry, long and saline.
The Moreau family have been in Chablis since 1814 and have farmed the current twelve hectare estate organically since taking their vineyards back in 2002. Around five hectares sit in grand cru, with parcels in Blanchot, Les Clos, Valmur and Vaudesir. This drinks beautifully now and will gain complexity over several years. Serve with scallops, richer seafood, roast chicken or a soft cheese.
